An Ugly Situation




Few months ago, we heard of an outbreak of one of the most deadly diseases on earth –Coronavirus (COVID-19). The world was thrown into a state of pandemonium within a twinkle of an eye, and just as its wind blew through all corners of the earth, institutions, firms, and businesses were ordered to shut down in order to contain the spread of the disease. Strict health and safety measures were taken in terms of social distancing, use of hand sanitizers, face masks, and diligence in washing of hands. As though those were not enough, some countries witnessed a widespread of CODVID-19, which resulted in enormous increase in death cases. At this point, it is as though world economy has come to a standstill, and mother earth is finally shutting down to combat what has grown from an epidemic to a pandemic.






Pretty Tough Condition



On your side of the world, all of a sudden, the lines at supermarkets start to increase, and at a point, these shops are overwhelmed by customers as a result of impulse buying. Why? Counters are cleared and accounts are almost on a red alert. People live in fear and confusion.  Also, the media isn’t making matters any easier. One day, in the midst of all this confusion, something new happens that changes everything for you. 

You are the kind that works around the clock, and when you already have the week planned out, you tune into your favourite radio or TV station, click on that regular blog or website, and what? ‘A lockdown!’ is all of a sudden implemented without any prior notice. The kids would be out of school for who knows when, you and hubby have been asked to work remotely from home, and you absolutely don’t know what to do with organization –most especially—food. Not to worry, I had to buy over some interesting ideas right from Chinwe’s kitchen, just for you.

Although we are in a state of crisis, I hope you have stocked up by now because that’s the only way this inspiration is going to come in handy for you. So, follow me!

Meal Inspiration

1. Bouncy Breakfast.








Try and start each day on a creative note. For you, you could have a smoothie, but for the kids, make them some pancakes, waffles, French toast, sandwich, alongside a dairy product, beverage, oat, pap, and what have you. If you can make akara (bean cake), that would be lovely too. Please, those kids would be staying with you for far longer than you can imagine, so, get up and get creative.


2. Yummy Lunch









Usually, they are still active, and would be crying on your neck by now. Just make them something high on calories or carbohydrate. This is because you don’t expect them to seat idle doing nothing? They would want to go out and play, and before you know it, they would come back crying for more food. Knowing that for the time being, you are on a budget because absolutely nothing is being returned, and you need them to not just eat healthy but heavy. So, these could do: 










3. Something Light for Dinner










This is simply the best moment. They say variety is the spice of life, and you agree too. So, choose from any type of salad you know and get going. It could be a whole vegetable salad for adults in the house, while the kids should munch on egg salad, chicken or beef salad, or just fish salad. These are pretty simple, and wouldn’t take you up to an hour to prepare. 


Little Bites








These could act as sidekicks; meals before the actual meal. You know that kids would always want to have something in the their mouth, so, you could as well stock up on chin-chin, ice-cream, cookies, grilled chicken, cakes, sweets, chocolates, and many more.
